Tasting Notes:

Soft aromas of black cherries, cedar, licorice and chocolate lead to flavors of plums and blackberries. Nice, round mid palate and firm tannins make for a long lingering finish.


2007 Fog Crest Chardonnay


Winemaking Notes

The 2007 vintage is characterized by an even growing season. The temperate weather allowed the fruit optimal hang. A heat spike during the first week of September pushed our harvest date up but the resulting fruit was near perfect. The grapes were pressed as whole clusters at harvest to retain the most delicate fruit aromas and flavors. The resulting juice was settled at 58 degrees for 24 hours then racked immediately to barrel. Our 3 coopers, Alain Fouquet, Maison Latour and Tonnellerie de Mercurey add unique character to the blend. Fouquet adds a rich toast, Latour adds depth and structure with Mercurey bringing out the mineral and spice.

Tasting Notes

Hazelnut and lemons lift aromas of toast and spice.  The fruit is framed by subtle oak flavors. More minerality than pure fruit, citrus and tart apple blend with stony earth. Melding into what we describe as the classic Fog Crest Vineyard structure. This vintage should age gracefully through 2014.

Tasting Notes

Aromas of plum, pomegranate, black cherry, pepper and sweet tobacco.  Medium bodied with smooth mild tannins accompanied by flavors of raspberry and toffee.

Suggested Food Pairings

Grilled meats, lamb, hearty pasta dishes.


2008 Schweiger Estate Chardonnay

Spring Mountain, Napa Valley

Winemaking

Barrel fermented and aged surlies for 8 months in neutral oak barrels, 100% Chardonnay. No malolactic applied.

Tasting Notes

Hints of pear, kiwi, citrus, and apricots, and delicate undertones of oak and tropical fruits.

Key Selling Points

Estate grown, bottled and produced in Spring Mountain AVA at 2000ft. Mineral characteris-tics, more reminiscent of a classic Mersault. No malolactic. Limited production 800 cases .

2006 Schweiger Estate Cabernet Sauvignon

Spring Mountain, Napa Valley

Winemaking

32 months in oak barrels, 48% new French oak. 96% Cabernet Sauvignon, 4% Merlot. Open fermentation in small containers, punched down twice a day.

Tasting Notes

Lively with essences of dark berries, plum, dark chocolate, and toasty oak.

Key Selling Points

Estate grown, bottled and produced in Spring Mountain AVA at 2000ft. Fruit forward and stylistically different from valley floor cabs. 100% sustainable farming and solar powered.

Winemaker’s Notes

A long mild spring and summer gave the grapes plenty of time to soak in the sun and develop intense flavors and tannins typical of great mountain Cabernet.
